Apple Plum

Pancake

 

4 tablespoons virgin coconut oil
1 large apple, peeled sliced
5 dried plums, sliced to half and soaked in water for 1 hour - optional
1/2 cup almond milk
1 cup whole wheat/ spelt flour
1 ts cinnamon
4 large organic eggs
3 tbs coconut palm sugar/ 2tbs agave suryp
1/2 ts vanilla extract
1/3 ts crystal/ sea salt
1 ts confectioners’ sugar to dust when done - optional
fresh berries on top to garnish - optional

Preheat oven to 450 F/ 225 C. Melt the coconut oil in ovenproof skillet over medium heat. Transfer 2 tablespoons to any type of blender or a bowl to mix with a hand blender. Add apple slices to skillet and cook, turning them until beginning to soften (3 to 5 minutes). While apples are cooking, add almond milk, flour, cinnamon, eggs, sugar/ agave, vanilla, and salt with coconut oil and blend until smooth. Add plums on the skillet with apples and pour the batter over them and place skillet in the oven. Bake until pancake is puffed and golden, about 15 to 20 minutes. Turn the pancake upside down on a large plate and sift confectioners sugar and some fresh berried over the top if you want.
