Fried Almond

Butter Vegetables

 

1 tbs virgin coconut oil
3 garlic cloves
1 onion
1 sweet potato
1 broccoli
fresh spinach and ripped kale
10 black olives, cut half
3 tbs briggs/ tamari
4 tbs raw almond butter
1/3 cups or hot water
black pepper

Heat coconut oil in a large pan, add sliced onion and garlic, cook for few minutes on medium heat. Slice the broccoli and add the stalk part of it first. Cook for a few minutes, then add sliced sweet potato and the heads of the broccoli. Add a drop of water on the pan and cook for 10-15 minutes, or until the vegetables are nicely ‘al dente’. Mix the almond butter with water and seasonings and add in the pan with vegetables. Add more water if needed. Add the spinach, kale and olive halves in the end, stir and cook for only a few minutes. Taste and add more seasonings if needed.

Serve with brown rice, hummus and sauer kraut! Enjoy!
